So really, I didn&#8217;t cook in week 2&#8230; but I am calling this week 2 because I plan to cook something else this week. Am I rambling? Yes.<\/p>\n<p>Here&#8217;s what I cooked&#8230;<\/p>\n<h3><strong>Chicken Enchiladas<\/strong><\/h3>\n<p>POINTS: 8<\/p>\n<p>16 oz canned black beans<br \/>\n10 oz frozen corn kernels, thawed<br \/>\n4 oz canned pimento, chopped<br \/>\n1\/3 cup(s) fat-free sour cream<br \/>\n1 1\/2 tsp chili powder<br \/>\n1 tsp dried oregano<br \/>\n1 cup(s) shredded reduced-fat Monterey Jack cheese<br \/>\n1\/4 cup(s) cilantro, chopped<br \/>\n*4 medium corn tortilla(s)<br \/>\n1 medium tomato(es), chopped<br \/>\n1 1\/3 medium chicken breast, cooked, skinless, cubed<br \/>\n4 medium scallion(s), sliced<br \/>\n1 1\/2 tsp ground cumin<\/p>\n<p>In a colander, rinse and drain beans, corn and pimientos.<\/p>\n<p>In a medium bowl, mix sour cream, chili, cumin and oregano.<\/p>\n<p>Reserve 2 tablespoons cheese for topping (I used more than 2 tablespoons of cheese on top) and add remaining to sour cream mixture. Fold in chicken, half of scallions, the cilantro, beans, corn and pimientos. Refrigerate, covered, up to 1 day.<\/p>\n<p>Spray a 7&#215;11-inch (20&#215;30 cm) baking dish with nonstick cooking spray.<\/p>\n<p>Soften tortilla according to package directions. Spoon chicken mixture down center of each. Roll tightly and place in baking dish.<\/p>\n<p>Preheat oven to 400\u00b0F (200\u00b0C).<\/p>\n<p>Bake enchiladas, covered, until heated through, about 30 minutes.<\/p>\n<p>Sprinkle with reserved cheese. Bake until cheese melts, about 5 minutes longer.<\/p>\n<p>Serve, sprinkled with tomato and remaining scallions.<\/p>\n<p><a href=\"http:\/\/www.pinkhairedgirl.net\/wp-content\/uploads\/photo_020809_004.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.pinkhairedgirl.net\/wp-content\/uploads\/photo_020809_004.jpg\" alt=\"photo_020809_004\" title=\"photo_020809_004\" width=\"500\" height=\"432\" class=\"alignnone size-full wp-image-2535\" \/><\/a><\/p>\n<p>*I used whole wheat tortillas which reduced the point level to 6 per enchilada.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I wasn&#8217;t too inspired to cook this week until tonight.
